Strawberry Shortcake-Guilt Free, Gluten Free and Sugar Free

I made this last night for a healty Valentine's Treat-I'm constantly amazed at what you can make without flour! I served these with homemade chocolate dipped strawberries.
From "Internal Bliss"
Shortcakes:
- 1/3 cup Melted Ghee or butter
- 6 eggs, lightly beaten
- 1/4 tsp sea salt
- 1/2 cup Raw Honey
- 1 Tbs Vanilla extract
- 1/4 teaspoon Almond extract
- 1/2 cup Coconut Flour
Topping:
- 2 Cups fresh Strawberries, sliced
- 2 Tbs Raw Honey
- 1 tsp Vanilla extract
- Preheat oven to 350 F
- Grease muffin pan or use parchment muffin cups
- Mix all shortcake ingredients together and divide among 12 muffin cups
- Bake for 20 - 25 minutes, until tops begin to brown
- Cool on a wire rack
- While cooling, mix topping ingredients, allow to sit for 10 - 15 minutes
- Cut muffins in half crosswise and top with strawberry topping
- May be served warm or cold
- Add a dollop of yoghurt or whipped cream to garnich if desired
