Strawberry Shortcake-Guilt Free, Gluten Free and Sugar Free

Heart_05.pngI made this last night for a healty Valentine's Treat-I'm constantly amazed at what you can make without flour!  I served these with homemade chocolate dipped strawberries.

From "Internal Bliss"

Shortcakes:

  • 1/3 cup Melted Ghee or butter
  • 6 eggs, lightly beaten
  • 1/4 tsp sea salt
  • 1/2 cup Raw Honey
  • 1 Tbs Vanilla extract
  • 1/4 teaspoon Almond extract
  • 1/2 cup Coconut Flour

Topping:

  • 2 Cups fresh Strawberries, sliced
  • 2 Tbs Raw Honey
  • 1 tsp Vanilla extract
  1. Preheat oven to 350 F
  2. Grease muffin pan or use parchment muffin cups
  3. Mix all shortcake ingredients together and divide among 12 muffin cups
  4. Bake for 20 - 25 minutes, until tops begin to brown
  5. Cool on a wire rack
  6. While cooling, mix topping ingredients, allow to sit for 10 - 15 minutes
  7. Cut muffins in half crosswise and top with strawberry topping
  8. May be served warm or cold
  9. Add a dollop of yoghurt or whipped cream to garnich if desired
